This recipe came to be by accident, actually! I was making a strawberry smoothie for the kiddos of a client and I had some extra. Knowing I wanted to add some vegetable to the smoothie I was going to drink I added some spinach and blended the two and, voila! The cutest little unicorn smoothie. And is it also the easiest little unicorn smoothie? Heck yeah.
Now, my secret ingredient to my smoothies is grass fed kefir. It’s thick, it has just enough sugar from its fermenting process to give it some yummy sweetness and it has some nice protein. Good news is there are all sorts of varieties of kefir on the market now! If you are unable to have dairy there is a great coconut kefir I used recently for a DF client and it turned out equally as delicious, I would just recommend adding some collagen or unflavored protein powder to amp that part up for satiety and nourishment.
Are there other colors you can add to this? Of course! You could add spiraling for a vibrant blue color, however I find it expensive and something I just don’t often have in my pantry. If you do, awesome!! Use it up! My goal with this fun and delicious version was to utilize things that I commonly have in my fridge and freezer, I find that makes things seem less daunting. Less of a project. Less of a “have to” type of thing. Strawberries, bananas, vanilla extract, kefir, spinach-that’s it! And if you have yogurt, not kefir…use that! You just may need to add some milk or milk alternative to loosen it up.

Unicorn Smoothie
Top-9 Allergy Adaptable
Serves: 2
Prep Time: 5 minutes
Ingredients
- 2 c. unsweetened grass fed kefir (*coconut kefir for dairy free)
- 2 c. frozen strawberries, slightly thawed
- 2 frozen bananas (tip! When I freeze my bananas I cut them into thirds to make blending easier!)
- 1/2 tsp. vanilla extract
- 2 c. lightly packed baby spinach
- *Optional: honey or agave, to taste. Collagen for additional protein.
Directions
- Add the kefir, strawberries, banana and vanilla to a blender and blend until creamy. Pour half into 2 glasses.
- Add the spinach to the remaining smoothie mixture in the blender and blend again until totally creamy and bright green.
- Pour over the strawberry smoothie adding a tiny bit extra to the top in a swirl.
- Enjoy!
