Waffles, Waffles, Waffles!!

I recently taught a Drizzle Kitchen Member class on waffles and then thought to myself, these recipes need to go on the blog! Waffles are a great thing to have on hand-whether its a tried and true recipe, whether it’s pre-made waffles packaged and ready to be reheated in the toaster or whether it’s something new you want to give a whirl!

There are three recipes included in this post: Almond Flour Waffles, Coconut Flour Waffles and a classic waffle recipe from my mom. A perfect trio for your mother’s day! Now, a note about the almond and coconut flour waffles-they are best as a thin waffle, or you can even  make them into a pancake. The classic waffle recipe from my mom is great as a Belgian style waffle. So, depending on your diet and your waffle iron you can mix and match the recipes.

I personally love a tiny baby waffle. And recently purchased an individual waffle maker for myself (brunch, party of 1 please) that I think is just about the cutest thing ever. It’s mini and is offered in a couple different colors and seasonally it has a few different shapes as well like a snowflake or heart. Check it out here!

And as far as maple syrup goes, please get rid of the fake, added coloring, plastic bottles full of junk. Pure maple syrup is delicious and is only one ingredient. If you happen to have a bottle of the imitation “maple flavored syrup” just turn the bottle over and take a peek at the ingredients. And then toss that right in the garbage.

Moving on to the recipes! And don’t forget about savory waffles. To make the almond flour or coconut flour waffles savory rather than sweet simply eliminate the sugar and vanilla, replace with some fresh minced chives and maybe 1/2 tsp. of garlic powder. Then top it with some fun stuff-grilled veggies, halloumi, fresh mozzarella and roasted tomatoes, use it as the base of avocado toast, the options are endless!

And don’t forget, if you or your kiddos plan to serve waffles to mom for Mother’s Day, YOU need to make them, it’s time to give her a break. And make sure to clean up that kitchen for her also!

Almond Flour Waffles

Free From: Eggs, Peanuts, Gluten, Soy, Dairy, Sesame, Fish, Shellfish.

Vegan, Sibo and Low-Fodmap Friendly.

Recipe contains almonds.

Serves: 1-2

Prep Time: 15 minutes + Cooking

  • 1/3 c. + 2 tsp. fine ground almond flour
  • 1 flax egg (1 Tbsp. flax meal + 3 Tbsp. warm water)/1 egg if you can safely eat chicken eggs
  • 1 Tbsp. sweetener of choice
  • 1 Tbsp. psyllium husk
  • 1 tsp. vanilla
  • 1 tsp. oil (olive oil, avocado oil, melted vegan margarine)
  • 1 Tbsp. vegan milk
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. baking powder

Directions

  1. Preheat your individual waffle maker (for 2 waffles) or a regular sized waffle maker (for 1 waffle).
  2. Whisk together all the ingredients until smooth.
  3. Lightly brush waffle maker with oil and press either half (for the individual waffle iron) or all of the batter (for the full size waffle iron) into the base of the iron. Press down and cook according to your waffle maker instructions.

Coconut Waffles

Vegan, Sibo and Low-Fodmap Friendly

**Contains Coconut

Serves: 1-2

Prep Time: 10 minutes + Cooking

  • 2 Tbsp. coconut flour
  • 1 Tbsp. toasted, shredded coconut
  • 1 flax egg (1 Tbsp. flax meal + 3 Tbsp. warm water)/ 1 egg if you can safely eat chicken eggs
  • 1 Tbsp. sweetener of choice
  • 1 Tbsp. psyllium husk
  • 1 tsp. vanilla
  • 1 tsp. oil (olive oil, avocado oil, melted vegan margarine)
  • 1 Tbsp. vegan milk
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. baking powder

Directions

  1. Preheat your individual waffle maker (for 2 waffles) or a regular sized waffle maker (for 1 waffle).
  2. Whisk together all the ingredients until smooth.

My Mom’s Velvet Waffles

Free From Gluten, Tree-nuts, Peanuts, Fish, Shellfish and Sesame

 

Serves: 4

Prep Time: 10 minutes plus cooking

  • 2 c. sifted all purpose gluten free flour blend
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 2 tsp. sweetener of choice
  • 3 eggs, whisked (at room temp if using coconut oil)
  • 1 3/4 c. milk (at room temp if using coconut oil)
  • 1/2 c. oil (olive oil, avocado oil, sunflower oil, melted coconut oil if you can have coconut)
  1. Preheat your waffle iron.
  2. Sift dry ingredients together.
  3. In another bowl, whisk together the eggs, milk and oil.
  4. Add the egg mixture to the bowl with the flour mixture and beat until smooth.
  5. Brush your waffle iron with some oil.
  6. Scoop about 1/2 c. batter for each waffle and cook according to your waffle maker’s instructions.
