Almost every morning I make myself and my fiance a breakfast quesadilla. It’s nothing fancy but it’s delicious and starts our day out in the tastiest way! It’s a very simple recipe that requires only 5 ingredients-tortilla of choice, egg, slice of cheese, salt and olive oil. It takes all of 5 minutes to make and it all happens in one small fry pan.
Seems like a pretty good morning choice, right? Many of the Drizzle Kitchen clients agree! Now listen, if you have an egg allergy you can absolutely sub scrambled tofu or JustEgg or even a smear of smashed beans! Have a dairy allergy, use your favorite dairy free cheese (there are some really great ones out now, try my latest favorite Never Better Foods). I love using Siete Foods Almond Flour tortillas because of the protein but you can also use flour, corn or whatever is the safe tortilla for you to enjoy!
For all my protein people, if you use the almond flour tortilla + chicken egg + dairy cheese you have about 18 g of protein! Add a little bit of cottage cheese or some greek yogurt on the side topped with blueberries and you’ve got a delicious and nourishing breakfast that will keep your tummy happy for hours.

Breakfast Quesadillas
Allergy Adaptable to be Free From the Top-9 Allergens
Makes: 2 breakfast quesadillas
Prep Time: 5 minutes
- 2 Siete Almond Flour Tortillas (or tortilla of choice)
- 2 eggs (or egg sub)
- 2 slices favorite cheese or dairy free cheese
- sprinkle of salt
- olive oil
Directions
- Heat up a nonstick pan over medium for 30 seconds. Add a swirl of olive oil and crack the 2 eggs into the pan.
- Meanwhile, lay out your tortillas and sprinkle with shredded cheese or tear slice of cheese in half and lay in the tortilla.
- Break the yolk of each egg and lightly scramble the eggs keeping them in a little pile so they are easy to transfer to the tortilla.
- Once cooked, place each little egg pile one on each tortilla.
- Place the tortilla back in the pan and cook until the cheese is melted, sprinkle the egg with salt and then fold the tortilla in half.
- Enjoy!
