Cloudies Baked French Toast

Growing up french toast was my absolute go to at restaurants for breakfast. It didn’t matter where we were, fancy brunch? French toast. Mediocre diner? French toast. Breakfast at our great grandma’s house? The BEST french toast!

But now, as a wellness focused chef who helps families navigate allergies and health concerns I’ve put french toast somewhat on the back burner. Until now!!!! I’ve been doing some recipe testing with The Cloud Bread Company Cloudbread for a few years now and can’t believe it took me this long to make this recipe.

The recipe itself is- easy, one dish, prep it quickly and soak overnight before you bake it- type of meal. It’s just sweet enough and has this decadent custard like mouthfeel to it. And because you have to soak it this makes for the best kind of thing to prepare for holidays and when you are entertaining. Plus it makes your whole house smell like yummy sweet cinnamon which should be reason enough in itself!

Cloudies Baked French Toast

Gluten free, Nut Free, Peanut Free, Grain Free

 

Serves 4-5

Prep Time: 20 minutes + overnight soaking and 40 min baking time

 

Ingredients

  • 3 tbsp. unsalted butter or vegan margarine
  • 1/3 c. coconut sugar
  • 2 eggs
  • ½ c. milk of choice
  • 1 tsp. vanilla extract
  • Sprinkle of cinnamon
  • 1 box Original Cloudies

Directions

  1. Preheat oven to 350. Place the 3 Tbsp. butter or vegan margarine in an 8×8 glass baking dish or small oval baker. Place in the oven to melt, about 6-7 minutes.
  2. Once butter is melted, remove from oven. Sprinkle the coconut sugar evenly over the butter and place back in the oven for another 5-6 minutes until bubbling.
  3. While the pan is in the oven, whisk together the eggs, milk and vanilla extract. Set aside.
  4. Remove pan from the oven with the butter-coconut sugar mixture. Unwrap the Cloudies from their packaging and layer them over this mixture like a shingle roof.
  5. Evenly pour over the milk mixture and then finish with a sprinkle of cinnamon.
  6. Wrap tightly to cover and refrigerate overnight.
  7. The next morning, when ready to bake, remove plastic wrap and replace with foil. Bake at 350 for 30-35 minutes until set.
  8. Let sit 5 minutes before cutting. Enjoy!!
