It’s football season and often my favorite part is the snacking rather than the actual sport! It’s also a great time of year to get friends together for casual daytime hangouts, with or without football. I have my usual arsenal of snacking like caramelized onion dip, homemade almond flour crackers, vietnamese chicken wings but sometimes you want something with more substance, right?
I’ve seen a few smash burger iterations and wanted to play around making a version that was fun, classic in flavor but not heavy. Something lightened up and equally delicious as the restaurant counterpart. And, of course, it needs to be gluten free. So rather than do an actual smash burger with a bun I figured let’s do a smash burger folded so you don’t have the heavy bun anchoring it. Cloudbread to the rescue! It’s light, but sturdy enough to hold the smash burger and fun fillings, it’s gluten free…perfect!
As far as cooking smash burgers, I find a flat griddle (preferably not nonstick) or a cast iron pan is the best. The benefit of the cast iron pan is that the edges tend to get a little golden and crispy of the burger itself! I have a 10″ Lodge well seasoned cast iron pan that I use for this recipe and it’s perfect. I can make two of these at a time and they sear up beautifully!
These Smashburger Foldies are a really fun way to change up your normal casual hang menu. They’re also pretty easy and fast to make and a delicious switch from a regular burger. So stock up on some Cloudies from the Cloudbread Company and whip up some of these babies for your next football Sunday!

Cloudies Smashburger Foldies
Gluten Free, Nut Free, Soy Free
Makes: 8 Foldies
Prep Time: 30 minutes
Ingredients
- 1 pound ground beef
- Salt and pepper
- 1 box of your favorite Cloudies Flavor
- 4 slices of your favorite cheese (love to use cheddar or muenster for these!), cut in half
- Classic burger accouterments: pickles, sliced lettuce, tomatoes, ketchup, mustard
- Special Equipment: burger press or foil lined brick to “smash” the burgers
Directions
- Divide the ground beef into 8 balls (about 2 oz each if you measure them out) and roll gently into a ball.
- Crack a bunch of pepper and sprinkle salt on a plate and roll each ball to coat.
- Preheat a cast iron pan or a griddle until smoking hot.
- Lay 2 of the ground beef balls on the pan and place a Cloudie on top. Press down with the burger press to smash.
- Let sear for 2ish minutes and press down again. Continue cooking another minute.
- Flip over (I find a spatula helpful as they might stick slightly) and immediately lay the cheese on top. Cook for 1 minute and remove to a tray.
- Continue with all the burgers in this manner. Serve with accouterments so everyone can make their own Foldie!
