Mr. Giggles and I had a lazy morning today….which led to a very late arrival at the farmer’s market! Luckily, they had plenty of strawberries left (I was planning on making strawberry mint buttermilk sherbet tonight-strawberries are a necessary ingredient!) in addition to some other lovelies that came home with us like yellow tomatoes, baby kale, a slew of fresh herbs and some local eggs.
Now, I woke up this morning already ravenous. I have been running much more with the nice weather and doing a lot more ballet so I find that I wake up starving because I am being so much more active these days (score!). And of course a late arrival at the farmer’s market + a latte + running more errands led to some low blood sugar by the time we came home. So after I threw a slew of almonds and some strawberries in my mouth for some immediate sugar (phew!) I popped together this easy brunch dish of eggs cooked in tomato sauce. But with such lovely baby kale I thought, why not saute some of that and throw it in the bottom of the dish? Genious. This is of course wonderful with homemade tomato sauce, but if you find you are out (or if you find that it’s insane to make and jar your own tomato sauce) I have included a picture of my absolute favorite, made by Rao’s.
So, the next time you need an easy breakfast dish or you find yourself in a I need to eat now or I will rip someones face off this is one of those simple, throw it together and have a nice hearty dish that feels it took much longer to prepare than it actually did. Enjoy!

- 2 handfuls of baby kale or baby spinach, roughly chopped
