The Super Bowl is in T-1 days. Do you know what you are making? Where you are going? What you are going to be eating and drinking?? In all actuality, I don’t really get excited about the Super Bowl itself. I know, shame on me. I grew up in a house of girlie girls, what am I to do?
Well, unbeknownst to me I found out today that the Super Bowl is the second largest day of food consumption in this country. Second to Thanksgiving. Now that tells ya something! So with this big food “holiday” upon us I feel it is my duty give you lovely people some ideas for what you can make (and what I will be eating)! (Click on the title for the recipes)
*keep these in the freezer or refrigerator until you are ready to serve them
*Note-these do have coconut oil in them, if you cannot eat coconut oil try using shortening as your substitute
All of the recipes included in this menu, aside from the Nutty Chocolate Cups, I wrote for a company that I love working with, Enjoy Life Foods. Everything they make is free of the top 8 food allergens (that means no fish, shellfish, soy, dairy, peanuts, tree nuts, wheat or soy!). Plus these recipes are also free from potatoes and corn. So if any of these are things you, your kids, or your Super Bowl guests can’t eat then-you are in luck! Also listed in italics are 2 things you can easily purchase (save yourself some work!) that are also free of all the top 8. I have made a few notes next to things if you are able to substitute nuts or dairy, but the recipes themselves which have links to their origin on the ELF website are free of all the things I listed above. Hooray!
So whether or not you actually watch the Super Bowl, at least you and your guests can enjoy all of these delicious things without worrying about who can eat what. Now-who will have the best commercial…..?
happy, healthy eating! ~Kendra
